The Story of Anhydrous Winery
It all began in the early 2000s. Avantis Estate’s winemaker, Mr. Apostolos Mountrichas, discovered a profound connection with Santorini and the strong personality of Assyrtiko, a native grape variety renowned for its unique characteristics. Driven by this passion, he embarked on his Santorini project in 2012.
In 2021, after nearly a decade of dedication and innovation, Mr. Mountrichas founded Anhydrous Winery. His winemaking philosophy is deeply rooted in experimenting with ancient techniques to produce modern wines that exhibit purity and primary varietal characteristics.
Anhydrous wines are a testament to the unique terroir of Santorini, reflecting the island’s anhydrous (dry) land, the majesty of its earth, the volcanic soil, the intense sun, the cooling sea breeze, and the Cycladic air. These elements combine to create wines with a distinctive and intense personality, capturing the essence of this unique PDO (Protected Designation of Origin) region.
